Picanha is my favorite cut. I get Australian BMS 9 picanha for $18/lb in the states from a wholesale vendor. Insane marbling and such a richer beefy flavor with same tenderness as a quality ribeye.

its interesting you talk about each taking being better at a different temperature.  I've noticed this at home but I wasn't sure if it was something I did wrong in preparation or something.  Growing up I always just took each steak to the same temp.
