LDL is important. It’s good for you, as long as it’s not damaged by sed oils and carbohydrates.

Every morning I eat steel cut oats all winter and rolled oats the rest of the year. I put half a banana and two teaspoons of cocoa powder in my oatmeal. Cocoa is healthy and gives me a little bit of iron too. Win win. I’m 73 and not on any medications.

Oat groats are even better that steel-cut oats.  I cook them in a Tatung rice cooker (made in Taiwan) in the evening.  Wash the like rice.  Steam them inside the Tatung rice cooker.  When cooked, let it cool and refrigerate it.  In the morning, you now have more resistant starch from the chilled oat groats. About 60% is absorbed in your intestine, the remainder is not absorbed and passes into the colon, the insoluble fiber is now feeding the gut bacteria to produce short chain fatty acids.  SCFAs boosts your immune system.  I add wheat germs to my oat groats, Goji berries or other berries, nuts, and soymilk before I eat the oat groats. I put the oat groats with soy milk back into the Tatung steamer to steam and reheat the oats before eating it.  I don't use the microwave to reheat.  Temperature too high.

I ate all those foods for decades. Became obese and  insulin resistant. Developed plantar-fasciitis, depression and  interstitial cystitis. Switched to a carnivore diet with fatty meat and everything is 90% improved. My brains is working better than I could have  imagined. Cholesterol is my friend. Carbs are my enemy.

I bring 4c water to boil. Stir in 1c steel cut oats & cook 1 minute. Lid up, remove from heat & go to bed. In the morning portion into bowl & reheat in microwave. I put the rest in a glass quart jar & put in fridge. Easy as can be!

I have to add that nuts are high in calories and can raise good cholesterol.  For the holidays (instead of sweets) I pulsed (in food processor) raw cashews, pistachios, almonds, pumpkin seeds, flax seeds, cranberries, vanilla and dates.  Made into balls, dipped half in melted chocolate (sprinkle flaky sea salt) put in freezer.  Store in ziplock freezer bag.  Nice treat.
