Could someone provide the perfect cooking temperatures for a variety of steak cuts? I am trying to achieve the ‘perfect’ doneness.

Interesting perspective on the picanya re, going to medium. I'm excited to try, I traditionally make a mess of that cut. Thanks!

Picanha is my favorite cut.  I get australian BMS 9 picanha for $18/lb in the states from a wholesale vendor.  Insane marbling and such a richer beefy flavor with same tenderness as a quality ribeye.

Regarding differences between London and (general) American cuts, it’s amazing to see the evolution in both scenes.
America’s seen a rebirth in farm to table (especially with meats). It’s normal in the US to see even small towns have butcher shops with a single source farm relationship, generally mostly grass fed.
I think the quality everywhere has gone up significantly too. What used to pass for restaurant grade is now common everywhere

"You could easily take this practice and do it on a pan, but.. We've got this beautiful high powered grill that cost me a fortune, so I'm gonna use this instead" (every regular dude reading this is now locked in)

Never been able to afford a big t-bone like that, but honestly I'd love to try one, one day.

That bone-in sirloin looked pretty good.
