For some reason it's reassuring and somehow comforting seeing you trying to make do with the holiday home kitchen setup (paella pan notwithstanding). I know I struggle with the bluntness of knives and the tiny chopping boards whenever I go to stay somewhere.

Spaniard here. Loved the recipe and technique. Now I’m just here munching popcorn, waiting for the paella police to show up, foaming at the mouth like it’s a national emergency. After that, they’ll probably go ruin a carbonara with cream.

Hi guys I love every episode. I am a chef and have been in many good restaurants but now I have moved to a golf course to run it and want to improve the food without going over the top. I do a rolled pork loin in a pancake with a duxelle. Would you be able to do an episode on rolling different thing one day please

I make a Seafood Paella as my seven fishes for Christmas Eve. I tend to keep it traditional with fish stock, saffron, fava beans, and a variety of fish and shellfish to get to my minimum of seven. Though it's a bit different every year, it's always a winner.
