That looks amazingly delicious.
"Paella" style is my way to go for rice most of the time: easy and delicious no matter what you put in.
Just today I made one with some mushrooms (setas de san Jorge/perrechico) I gathered yesterday while visiting my grandpa.
No ring, proper fire, nor paellera, just my induction and a large pan.
This mushrooms are very tasteful so it was just them with olive oil, plenty garlic, cayenne and salt. Hard sear on them, bomba rice and water, not even stock.
And I end up with a very tasty meal (socarrat included) very easily made, which is why this is my favourite way of cooking rice

The painful thing about these contents is you start reading them and you think i can do this in an evening or a weekend, nothing hard so far, then out comes the stock. And its not from a stock pot lol. Its some elaborate thing that's taken hours to construct itself. The stock makes everything next level with a hell of a lot of dishes. Yes i know you can make it and freeze it or something like that but as a man who's just handy in the kitchen and not a chef i have no time for some smart thinking!
