hint: try to "massage" or play with it while it is still semi frozen, delicate - not to break the skin, you have to play with it when its texture is like sorbet. trust me makes it even more soft it helps to break muscles inside.

I loved octopus, but then I read a documentary called “My Octopus Teacher” and it really changed my mind about them and stopped eating them, personal preference. I do get what you’re saying though, like where do you draw the line? It’s a personal thing I believe, great content!

There is a special smell to roasting octopus. I use my pressure cooker for the steaming phase which also makes a good stock. I wish the UK octopus was the two lines of suckers and the large ones you use were available. I live by the sea with day boats catching them 6 days a week if they are available.

We just cook it in their own juice - no water, no salt, turn on the heat and the octopus will release its juice, they're plenty salty. I also like when it's previously sun dried and then char grilled- it comes out more concentrated, chewier but in a good way.

Pedant corner from a cell biologist - octopus have cell membranes not cell walls (plants, funghi and bacteria have cell walls, animals have cell membranes). The ice expansion still ruptures the membrane though.
