I learn more from this channel than 100's cookbooks with the same things and not how to make components I choose to use in different ways. I love purees for the very unfancy reason is that even the most picky eaters usually love eating their veg if it's in a puree.

I always appreciate a purée on a plate. As someone who tends not to mix their food when they eat and instead eats individual components one at a time, a purée kind of has to be put with other things so it rounds out the flavours when I eat.
