Why should I eat fermented foods?

I've read that foods that have undergone fermentation are good for the gut, but do these foods have other health benefits?

As much as this conversation may seem technical and thorough, it still only scratch the surface of what Prof Gardner has to say in favor of plant based protein and how 0.8 g is enough. For example, amino acid recycling was not mentioned.

But overall, very glad Prof Huberman finally got to inviting with “the other camp”.

Christopher is right about his definition of plant-based. It means BASED around (i.e. mostly) plants, not exclusively. That just leads straight into the purity mentality where someone who eats 80% unprocessed plant foods could be told they're not whole foods plant based because they have a little meat or dairy in a predominantly whole foods, plant based diet. Which is absurd. It's overall dietary pattern that matters

As a Brit who travels a lot in Europe, I’d say Europeans place more emphasis on food quality, appreciation, cooking etc. It’s a cultural difference. I cook from scratch and have zero UPFs and willingly sacrifice time I could be spending doing other things however I’m v much an We Are What We Eat person as so place great value on this. No wealth without health. I feel sorry for people who haven’t woken up to this, and no, it’s not more expensive. Junk food and takeout, and generally eating out is expensive - I don’t engage in any of these.

The biggest obstacles I see to change how we eat are the profits of big food corporations. My son is going to visit Thailand in June. He's been there for extended stays twice before. He tells me that most or large parts of everyday meals are prepared in the markets, even foods eaten at home. There is almost no obesity there. My point is, it's not that Americans eat out, it's that, generally speaking, what we are offered when eating out is very unhealthy, either ingredient-wise or in preparation.

When it comes to eating, what is completely overlooked is the aspect of conversations during meals. When you eat together, you also talk in between the bites, which slows the speed of food intake. This means the stomach has more time to give feedback when it's enough. Looking at how they eat in the Mediterranean compared to the US, this may be a hidden major factor when it comes to obesity.

The problem with nutrition science is sadly it’s had a very inconsistent history of getting things right and as we are on the end of this guidance we feel the impact. I’m thinking eating (trans fats) margarine not butter, don’t eat eggs, don’t eat nuts when pregnant, eat lots of carbs, eat low fat, eat snacks between meals etc etc. I can’t think of any other science that keeps doing such big about turns. No wonder we are confused. Just look at reducing cholesterol by diet, much of that has changed in terms of dietary cholesterol

I remember when you reviewed the twins paper and both you and Pater A focused on " twins did not stay plant based after study

Thank you Professor Huberman, is a regular "organic steak, beef, chicken, etc" considered a quality source of protein? Also, I started eating buckwheat or buckwheat noodles (I get it, there's some processing going into Japanese style noodles) but there's more protein to carb ratio and it's whole grain and goes well with beef, chicken and fish.

So I skipped straight to the raw milk portion and am wondering if maybe length of time you've had raw milk makes a difference? One of my kids loves milk but he would had really bad skin issues that steroid creams wouldn't help, so I switched him over to raw milk the skin problems went away and haven't been back. He's been on raw milk for about two years and though he doesn't have skin conditions, the kid sneezes a lot and thinking of it I've had stuffy nose too since adding raw cream to my coffee. Maybe I'll try weaning us off milk.
